I fell in love with the magical Castello Di Vicarello when I was shooting a commission for Conde Nast Traveller UK on the Maremma coast in Tuscany. The splendid isolation, the impeccable elegance of its restoration and its unique 17th Century vaulted kitchen, where its stylish owner Aurora produces exceptional regional food from ingredients grown or sourced from the estate or local artisans, completely captivated me. So I suggested to Aurora one night, whilst sharing some of their home grown organic wine after another superlative dinner, that we create a cookbook to capture the essence of the Castello. And My Tuscan Kitchen, now published by Rizzoli, was born. Our labour of love was shot seasonally over long weekends and stolen weekdays. We ate a lot, drank some wine, established a great friendship and my Italian improved slightly.
